Green Chili Chowder

The original recipe came from my sister-in-law Andrea. This is a very to your taste kind of recipe so below is the way I make it.


5 small-medium white potatoes
3 Tbsp Chicken Bouillon
2 cans Evaporated Milk (or 1 can + 1 pt cream or half and half)
1-2 Chicken Breasts - sprinkle with seasoned salt before cooking and then shred or cubed
6-7 whole Green Chiles diced or to taste: add 3-4 for mild, 5-7 medium-hot
*can used 1 or 2 4-oz cans diced green chili

optional: serve with shredded cheddar cheese

I cook the chicken in the crock-pot with 1/4-1/2 C. water. Sprinkle the chicken generously with seasoned salt and cook on low 5-6 hours and then shred.

Scrub and cube potatoes, leaving skin on and place in large pot on stove. Put enough water in to barely cover potatoes and simmer until tender about 20-25 minutes.

Add bouillon 3 Tbsp. or more to taste, evaporated milk, cooked chicken, and green chili.

green chiles- for more heat leave the seeds and membranes with the green chili, remove completely for a milder soup.

variations: add 3 celery stalks sliced, boil with the potatoes

Cheese-Stuffed Jalapeno's

These jalapenos are from my garden. When I am not making salsa or have enough of a harvest to pickle and can the jalapenos--I love to make these tasty appetizers.

12 medium jalapeno peppers
4 oz cream cheese, softened
1 1/2 cups shredded cheese (Cheddar or Colby Jack)
additional shredded cheese to sprinkle on top of filling
3/4 tsp. Worcestershire sauce
bacon cooked and crumbled
(I use Kirkland bacon bits, but can cook and crumble 2 bacon strips)

Wear disposable gloves and cut jalapenos lengthwise to make a shell. The cheese filling stays in better if you cut a small part of the pepper to make a shell, instead of cutting it into equal halves. I will save the jalapeno tops and put some filling on top for the chef to taste after baking!

Place peppers in boiling water for 7-10 minutes. Drain and rinse in cold water; set aside. The longer the peppers boil the milder they become.

In a small mixing bowl, beat cheeses and Worcestershire sauce until mixed.

Spoon filling into each jalapeno shell, remember the cheese will melt-so don't overfill or it will melt off jalapeno when warmed. Add a small amount of shredded cheese on top of cheese filling. Place on a greased cookie sheet and bake 400 degrees 5 minutes or until cheese is melted. Sprinkle with crumbled bacon. Serve warm.

Chicken dish with classic baked potato

Shopping Trip 13

I had an awesome vacation last week and now I am ready to get back into the swing of things and find some great deals!

I heard Old Navy is doing the %50 of clearance price sale until Wednesday. I haven't checked it out yet, but this is one of my favorite times to buy shorts/shirts for my kids for the next summer.

I used my Milk coupons that I got last week at Albertson's. They gave me the full value of both coupons $4.50 or $9.00 even though the milk was $1.58!

For a total of $3.68 I bought:

a pineapple

Strawberries have been delicious and only $1.00 for each 1 lb container! Blueberries are in my freezer I will use them to make blueberry muffins, or throw a few in when I make a smoothie.
When you buy 3 participating General Mills product you get a coupon for free milk! My milk coupon expires July 29th.
I got a coupon for $1.50 off when you buy 3 General Mills Cereal from the printer when I was checking out. I was able to use this coupon with the current purchase. With coupon I got 3 boxes of cereal and a gallon of milk for $3.17

I just updated the Costco price list. I put Costco prices in red to show off what I great deal I got! (You can get a great deal too even without coupons!)

To compare prices I always break it down to a single unit. i.e. Toilet Paper one package is 12 big rolls = to 24 single rolls and the package I am comparing to is 30 mega rolls = 75 single rolls. I use the 24 and 75 single rolls to compare prices.

For Paper towels I had the total sq. foot of each package to compare prices.

Tide liquid detergent 32 load - $3.99 ea. or .125 a load compare to Costco $.20 a load!
($4.99 without coupon, $.156 a load, or use coupon $1.00 PG 7-5)

Charmin Toilet Paper 12 mega rolls = 24 single rolls - $4.49 ea. or .187 a roll compare to Costco $.262 a roll!($4.99 without coupon, $.208 a roll, or use $.25 PG 7-5) My Safeway doubles which made the coupon worth $.50)

I love getting these samples in the mail. Many of the samples I have received have been perfect to stick in the car or in our emergency packs.

Sweet and Sour Chicken

I saved the pineapple juice to use in a marinade for flank steak that we will have Sunday.


Also, I used the leftover chicken broth as part of the water for the rice. I also cooked more rice than needed to make fried rice this weekend.



This makes 4-6 servings, depending on the amount of chicken. This is a good left over lunch recipe--just keep the chicken and rice separated, reheat separate and then combine.







Sweet and Sour Chicken

1 lb to 1.5 lbs Chicken breasts or tenders, cut into chunks
1 egg beaten
1 tsp. garlic salt
1/2 tsp. pepper
6 Tbsp. flour

8 oz canned pineapple chunks
(I usually have the 15 oz cans, so I serve the leftovers to my kids.)
1 red pepper, cut into pieces (tonight I used 1/2 red and 1/2 of an orange pepper.)

sauce:
3/4 C. sugar
1/2 C. white distilled vinegar
1/2 C. chicken broth
3 1/2 Tbsp. ketchup
1 Tbsp. soy sauce

Combine flour, garlic salt, and pepper in a small bowl. Take chicken pieces and mix with beaten egg, and then mix with flour mixture to cover pieces. Brown chicken in a fry pan with hot oil on medium-high heat. Place in 9 x 13 baking dish. Add 1/2 can of pineapple (reserve juice and freeze for another meal if desired.)

Heat all sauce ingredients and pour over chicken and pineapple. Cook uncovered 350 degrees 45 minutes. Add peppers last 15 minutes of bake time. Serve with rice.

Flank Steak Marinade

I love to use leftovers to make a Thai Beef Salad the next day. I will post pictures after I make this Sunday and the Thai Beef Salad on Monday.

Flank Steak Marinade
(Brooks' recipe)

equal parts (usually 1 cup each)
pineapple juice
brown sugar
soy sauce

mix together and marinate flank steak over night in the refrigerator. (at least 4 hours not more than 24 hours.) Turn flank steak over at least once, so all sides are well marinated.

Place on hot grill to sear on both sides, reduce heat and grill to taste.
Slice at an angle. Serve with rice and sauce.

Sauce:
Mix equal parts pineapple juice, brown sugar, and soy sauce in a sauce pan. Take out 1/4 c.-1/2 c. of sauce and add 2 Tbs. or more cornstarch and mix well. Bring to a boil saucepan to a boil and then add cornstarch/marinade mixture and mix well. Boil until thickened.

I usually make this with leftover flank steak or other steak. If using left overs you will want to reheat the meat so it is not refrigerator cold; just about room temperature.

If you want to start with fresh steak do this:
1 lb sirloin steak cut into strips
mix:
3 Tbs. soy sauce
3 Tbs brown sugar
1 Tbs. water
Pour marinade over meat. Marinate at least 30 minutes, no more than 24 hours.

Brown beef over high heat. Set aside.

Mix dressing:
1/4 C. soy sauce
1 Tbs. brown sugar
4 Tbs. rice vinegar
2 Tbs. lemon juice
2 tsp. sesame oil
1-2 garlic cloves-minced
1/4 tsp. red pepper flakes

Cook linguine according to package directions
Lettuce - washed and torn into pieces
(desired amount--do you want this to be a lettuce salad with some linguine noodles or a noodle bowl with lots of linguine noodles and less lettuce? Excellent both ways!)

carrots washed and coarsely chopped
green onions thinly sliced

Combine beef, linguine, and lettuce, onion and carrots. Pour dressing on top and toss to coat. (You will not use all of the dressing.)

Internet Coupons

There are some Yoplait yogurt coupons available on the coupon bar, look at the left sidebar.

$.60 buy 3 any flavor Thick & Creamy Yogurt (I love the key-lime pie!)
$.50 buy 6 any variety Yoplait yogurt cups.

I like to buy my yogurt at Wal-mart, it has been $.40 ea. With the coupons it makes them $.32 each or $.20 for the Thick & Creamy.

Zucchini Bread


makes 3 loaves

4 Eggs
1 cup Oil
3 cups Sugar
4 cups Whole Wheat Flour
1 tsp. Baking Soda
1 tsp. Salt
3 tsp. cinnamon
3 cups Zucchini, grated
3 tsp. Vanilla
1 cup chopped nuts

Beat together eggs, oil and sugar. Mix dry ingredients and add to wet ingredients, mix well. Add zucchini, nuts, and vanilla; mix. Bake in greased bread pans at 350 degrees for 50-55 minutes. If you don't want nuts in all loaves just leave out and then mix in 1/3 cup nuts into each desired bread pan.

Zucchini-on the side


1 zucchini-medium cut into chunks

Drizzle olive oil in a frying pan and turn burner to medium heat

add:
garlic powder - 1/8 tsp
salt
mix in zucchini

add:
sesame seed oil - 1 tsp add more/less to taste
red pepper flakes - 1/4 tsp more/less to taste
toss to coat and cook

cook until tender 10-12 minutes (I think mine took more like 15 min.)

Weekly Deals July 1-4th and July 1-7th

Most fruit and vegetables don't seem to be at a good price at the grocery stores this week. I am planning a Costco trip before Saturday to purchase most of my produce for the next week. The exception is cherries they are at the best price for the season, so if you like them now is the time to enjoy them!

Costco coupons...they do have some good coupon deals this week. I love to use the Electrasol tabs in my dishwasher until July 5, they are B1G1 free, which makes it canister of 100 about $7.50...tabs are a great price at $0.10 ea. so this would make them $0.075. Limit 4, but I am stocking up!
