Zuchini and Peppers stir-fry

Grandma's recipe
Cut all vegetables in match sticks.


3 Tbsp. olive oil
1 small onion
1 large red pepper
1 large or 2 small zucchini
1 clove garlic, minced
1 1/2 tsp. dried basil leaves
1 pinch thyme (optional-I put it in)
salt and pepper to taste


Put oil in pan on medium heat.
Add garlic and herbs then add vegetables and stir to coat.
Stir-fry until vegetables are tender.

Brown-Sugar Glazed Carrots

Potatoes are a great deal at Safeway- $1.98 for 10lbs. See the recipe-potato on the side bar for some ideas, or you can always have the classic mashed potatoes with your dinner.

Carrots 16 oz bags 3 for $1.00 at King Soopers this week. Try this recipe below for a side dish this week.

Brown Sugar-Glazed Carrots (I usually half the recipe)
8 servings

2 lbs carrots (6-7 medium)

1/2 teaspoon salt

2/3 cup brown sugar

1 teaspoon grated orange peel
(I have left this out before if I don't have an orange, but best with it in)

Peel and cut carrots into 1/4 in slices. Heat 1 inch water to boiling in saucepan over high heat. Add 1/4 tsp salt and carrot slices. Cover and heat to boiling again. Reduce heat so water bubbles gently. Cook covered 12-15 minutes or until tender.

Heat the brown sugar, margarine, orange peel and 1/2 tsp salt in the skillet over medium heat, stirring constantly. Do not over cook, stir until sugar is dissolved and bubbly remove from heat.

Drain carrots and then add into the brown sugar mixture cook on low for 5 minutes, stirring occasionally.

Potato Casserole

Teri's Potato Casserole

1 bag shredded potatoes - put in greased 9x 13 pan

mix together in separate bowl:
1 can cream of chicken soup
1/2 cube butter-softened
1 C. sour cream
1 tsp. salt
1 tsp. pepper
3 green onions (sometimes I leave out)

pour sauce over shredded potatoes and mix-in. Bake covered 325 degrees for 30 minutes. After 30 minutes stir potato mixture and sprinkle a layer of cheddar cheese (about 1 1/2 C.) and then sprinkle a layer of cornflake crumbs (about 1 C.) Bake uncovered for 20 min.

Asparagus


A delicious way to serve Asparagus: pour a little bit of olive oil on a cookie sheet, sprinkle with salt and pepper. Rub Asparagus in oil and cook in preheated 400 degree oven for 10-15 minutes. I like mine with a little crispiness.
