Potato Recipes

Potatoes are on sale this week for $2.99 for 10 lbs at Albertson's!

You can make several easy to make side dishes using potatoes. See the recipes below
!

Potato Salad

6 medium potatoes (2 lbs)
1 1/2 cups mayonnaise
1 tablespoon white or cider vinegar
1 tablespoon yellow mustard
1 teaspoon salt
1/4 teaspoon pepper
2 medium celery stalks (1 cup)
1 medium onion chopped (1/2 cup)
4 hard cooked eggs chopped (see below for cooking instructions)

Peel and cut potatoes into cubes, and place in 3-quart saucepan add enough water to just cover potatoes. Cover and heat to boiling; reduce heat to low. Cook covered 25 minutes or until potatoes are tender (check after 20 min.); drain. Let stand to cool.

While the potatoes cook I put the eggs in a saucepan and cover with water an inch above the eggs. Heat to boiling and then remove from heat. Cover and let stand 18 minutes and then immediately cool briefly in cold water to prevent further cooking. If shell is hard to peel, hold egg under cold water while peeling.

Mix mayonnaise, vinegar, mustard, salt and pepper in large bowl. Add potatoes, celery and onion and toss to mix. Stir in eggs. Cover and refrigerate at least 4 hours to blend flavors and chill. Sprinkle with paprika before serving.

Potato Wedges

4 medium potatoes, cut length wise into wedges or strips
1 tablespoon oil
Paprika
Salt

Preheat oven to 450 degrees. Use cooking spray to coat a rimmed baking sheet. Toss cut potatoes with oil and place in a single layer on the prepared sheet. Sprinkle with salt and bake turning once, until golden brown and tender, about 30 minutes. Sprinkle with paprika if desired.

BBQ Fries

4 tablespoons olive oil
6 tablespoons barbecue sauce
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/4 teaspoon ground cumin
1/8 teaspoon garlic salt
6-8 potatoes cut lengthwise into wedges or strips

Heat oven to 450 degrees. Use cooking spray to coat a rimmed baking sheet. In a large bowl, combine the olive oil, barbecue sauce, pepper, paprika, cumin, and garlic powder. Add the cut potatoes and toss to coat. Spread the potatoes in a single layer on the prepared baking sheet. Bake, turning once, until golden and tender, 25-30 min.

KFC free meal - rainchecks

Have you gotten your KFC rain check yet?


You must have one form for each coupon (up to 4) and will have to mail in the coupon with the form. If you have 4 coupons you will have to fill out 4 forms. You can drop off the filled out forms with the coupons at any KFC, but the forms must be turned in or postmarked by TUESDAY, MAY 19!

You can get the forms at any KFC. I also have the form on my computer, but I am having trouble putting it into a google document. However, it is working as an email attachment. Please contact me by email (see contact on the menu bar,) if you would like me to email it to you as an attachment. Be sure to print out the form on white copy paper.

Strawberry Pie

So easy and so delicious.

1 pkg strawberry Danish Dessert pie filling
4 c. fresh strawberries rinsed and sliced in half
1 graham cracker crust
Cook Danish Dessert pie filling according to directions, cool slightly. Mix with strawberries and pour into graham cracker crust. Refrigerate 4-6 hours. Serve with whip cream or ice cream

German Pancakes


1/4 C butter or margarine

3 eggs

1 1/2 C. milk

1/4 tsp. salt

3/4 C. flour

1/3 C. sugar


Preheat oven to 450 degrees. Evenly divide the butter into 12 mufffin tins. While oven is preheating put pan in oven only until butter is melted, do not allow it to burn. Put milk, eggs, salt, flour and sugar in blender and blend until smooth. With pan out of the oven pour batter mixture evenly into each cup. Bake for 12-15 min, they are finished when edges are golden brown.


Serve with syrup, berries and cream, brown sugar and sour cream, or sprinkle powdered sugar on top.

Potato Casserole

Teri's Potato Casserole

1 bag shredded potatoes - put in greased 9x 13 pan

mix together in separate bowl:
1 can cream of chicken soup
1/2 cube butter-softened
1 C. sour cream
1 tsp. salt
1 tsp. pepper
3 green onions (sometimes I leave out)

pour sauce over shredded potatoes and mix-in. Bake covered 325 degrees for 30 minutes. After 30 minutes stir potato mixture and sprinkle a layer of cheddar cheese (about 1 1/2 C.) and then sprinkle a layer of cornflake crumbs (about 1 C.) Bake uncovered for 20 min.

This is the last weekly code for a free rental at Redbox. Redbox will only release a free movie rental code on the first Monday of every month

It expires tonight at midnight.
At the first screen push the button "Rent with a Promo Code" and enter in above code. Select your movie and you will have to swipe a credit or debit card. Redbox will put $1.00 charge on your credit/debit card, but will remove the charge if you bring back the movie before 9 PM the next day (Tuesday.)

The $.75 coupon was for Huggie baby wipes, but I cannot stack my MC coupons and RR on one item. I was planning on saving my Huggies coupon for another time (it expired in July,) but my boys were good shoppers and were asking for a treat. I applied it here to the M&M's since I would have not used the coupon at all if it weren't for my boys-but they were worth a $.14 treat. I hope that makes sense.

Free Movie Rental at Red Box

Every Monday Redbox distributes a code for a free movie rental.
The Code for May 4: BT73H9
It expires tonight at midnight.
At the first screen push the button "Rent with a Promo Code" and enter in above code. Select your movie and you will have to swipe a credit or debit card. Redbox will put $1.00 charge on your credit/debit card, but will remove the charge if you bring back the movie before 9 PM the next day (Tuseday.)

Walgreen's discontinued Easy Saver Rebates

Walgreen's have discontinued there Easy Saver Catalog (rebate by mail) program.

They still have items you can purchase and earn Register Rewards. Just be careful because most of these items are over priced. Also your register reward will be treated as a manufacture coupon, so you must have the same amount or more items than you have total rewards and coupons.

Costco Price Points

I have updated and added items to the Costco price list - Check it out by clicking on Costco on the menu bar.

Since keeping track of Costco prices I have found they raise prices on some of their items when a coupon comes out. Most stores do a similar strategy, raise the price of an item and put it on sale for the item to look like a better deal.

In March Costco raised the price of the Arrowhead water a dollar and the Kirkland brand vitamins were $18.99- both items had a coupon in March. This visit the water was back to the $4.39 price and the vitamins were $15.99. There was a coupon for diapers and wipes this month, and Costco has increased the price of diapers in March. I am watching the price to see if they will reduce the price again and will post if I see the price change.

My strategy for shopping Costco is to shop for staples (flour, sugar, rice, cheese, bread, etc..) These items seem to always be at a good price. When I get a coupon book in the mail, I have started writing the price point in which I would pay for the item. For example Kraft Mac & Cheese had a coupon last month. My price point for the 15 count box was $7.50. (Grocery stores and Wal-mart often put it on sale for $.50 a box.) The Mac & Cheese before the coupon was $9.79 ($.65 a box) after the coupon it was $7.79- my target price was $7.50 so I passed. By writing in the coupon book the price point I was willing to pay, I didn't fall into the trap of buying things because there was a coupon for it.
